Tsujita Otemachi One
つじ田 Otemachi One店
Located on basement level 1 of Otemachi One, Tsujita serves its signature rich tsukemen, accented by sudachi citrus and kuro-shichimi spice before ending with soup-wari.
01 / ABOUT THE PLACE
Thick noodles dipped into a deeply flavorful tonkotsu-gyokai (pork and seafood) broth make tsukemen satisfying, but it is the progression of tart citrus and aromatic spices that keeps the bowl engaging to the final bite. At Tsujita Otemachi One, core offerings like the rich tsukemen and rich ajitama tsukemen deliver that concentrated savory profile directly, paired with classic toppings like scallions, seasoned bamboo shoots, and nori seaweed.
What elevates the experience is the fresh sudachi citrus served alongside the bowl and the kuro-shichimi (black seven-spice) on the counter. The recommended ritual begins by tasting the noodles dipped in the unmodified soup. After a few bites, squeezing sudachi juice over the noodles introduces a refreshing, crisp acidity that balances the heavy broth. A sprinkle of kuro-shichimi adds fragrant heat and depth, ensuring that even large portions never feel repetitive. To close, a ladle of light dashi broth—known as soup-wari—is poured into the dipping bowl to turn what remains into a comforting soup.
Beyond dipping noodles, diners can order standard hot rich ramen topped with chashu pork, menma bamboo shoots, scallions, and nori, which can be paired with kaemeshi (a small portion of rice to finish the broth). Generously topped deluxe bowls are also on hand. Positioned on basement floor 1 of the Otemachi One complex, the shop includes counter seating that makes it a convenient, fuss-free stop for a busy lunch or a quick solo dinner after work.
